Hamburger Tartare
/8oz. beef*
Salt
Lemon juice
Pepper
Dijon mustard
Red onion or shallots, chopped
Capers, chopped (a big jar is cheaper than the wee ones sold in grocery stores and then there’s more juice to add into the mix)
Fresh or dried parsley or cilantro
A quality egg yolk.
Alternatively, one can simply salt the meat and eat it because it’s so good!
Mix all ingredients - adjusting seasoning to taste. Form into round and serve with toast or crackers.
